Always Scratch Your Pancakes!

IMG_0666Today is the day that has changed my thoughts on from scratch pancakes. It really is just a few ingredients, that you normally have in your kitchen.

So, I took a look at some recipes for simple, basic, quick and delicious pancakes. Then I took a peek at the comments to see what everyone was changing and came up with my own concoction. If I do say so myself, they are pretty tasty and they do not have sugar in them! Now I know that I will change the measurements around as time goes by, so I will update this recipe, eventually. For now, tho, this one is good for me! Let me know if you have any suggestions, I would love to hear them.

HALF-n-HALF MOMMA PANCAKES

Dry Mix
2 cups of flour (1C all-purpose white + 1C whole wheat)
2  1/2  teaspoon baking powder
1/2 teaspoon salt
1/8 teaspoon nutmeg
1/2 teaspoon cinnamon

Measure all ingredients into a large bowl.

Wet Mix
1 egg, lightly beaten
1  1/2 cup milk (I used 1C goat milk + 1/2 cow)
1 teaspoon vanilla extract

Mix together in a medium size bowl.

Extras
1 tablespoon of butter, melted
4 oz applesauce, or one individual serving

Add the wet mix into the dry mix, stir until it’s smooth, but you still have lumps. According to everyone, the lumps make better pancakes, and it’s less work – yay! Then add in the melted butter and applesauce. Stir a couple more times.

I put my griddle on medium-low heat and used a small amount of vegetable oil. You can make them any size that you want, I use a 1/4 cup measuring spoon to pour each one. They cook pretty fast, just a couple of minutes on each side. You will know to flip them when you see a few bubbles.

I thought they were great and so did LL – to my surprise she ate one right away and then part of another. For her and a new food that is awesome! Plus, I have plenty more for other meals. I had two with a little maple syrup and my coffee. Add in the grapes we ate while I was cooking and it was a very satisfying morning meal.

Next time, I think I will mash up a banana and use two applesauce cups in the mix. Let me know what you think and if you improved on the recipe!

  1. I always make my own pancakes from scratch so they’re vegan. I use half whole wheat pastry flour (finer texture than regular wheat) and half chick pea flour. Healthy, kind to animals, and still delicious! Rahn loves a berry sauce that I put on top.

    1. ROBIN! You have come out of the dark and commented, I’m so happy. 🙂 That berry sauce sounds awesome, feel like sharing it? I would love to get away from syrup. Will have to look into these new flour types, sound good and I’m always down for healthier and nicer to animals. Does it count that I used goat milk and eggs from the farmers market?

  2. Looks good! So easy to make – I never buy the pancake mix anymore. I love adding cardamon and canned organic pumpkin – Yum! I’ll def give these a try~
